Sweet Pea & Fresh Mint Fritters

Bright green, soft-textured fritters that are perfect for little hands to grip. Naturally sweet peas combined with refreshing mint and creamy feta cheese make these a nutrient-dense lunch or snack.
Ingredients
- 1.5 cups Green Peas
- 1 tablespoon Fresh Mint
- 1 large Egg
- 2 tablespoons Feta Cheese
- 0.25 cup All-Purpose Flour
- 2 tablespoons Whole Milk
- 1 piece Spring Onion
- 0.5 teaspoon Baking Powder
- 1 tablespoon Olive Oil
Instructions
- Steam or boil the peas for 3-4 minutes until tender. Drain and rinse under cold water to keep them bright green.
- Place 3/4 of the peas in a bowl and mash them with a fork or pulse briefly in a blender. Leave the remaining 1/4 whole for texture.
- Finely chop the fresh mint and spring onion. Ensure the pieces are very small to prevent any choking risk.
- In a large bowl, whisk the egg and milk together.
- Add the mashed and whole peas, chopped mint, spring onion, and crumbled feta cheese to the egg mixture.
- Fold in the flour and baking powder. Stir until just combined into a thick batter.
- Heat olive oil in a non-stick skillet over medium-low heat.
- Drop 1 heaped tablespoon of batter per fritter into the pan. Use the back of the spoon to flatten them slightly into circles (about 5cm wide).
- Cook for 3 minutes on the first side until golden brown and the edges look set.
- Flip carefully and cook for another 2-3 minutes until cooked through.
- Allow to cool significantly before serving. These are great served at room temperature.
