Sweet Pea & Fresh Mint Fritters

Bright green, soft-textured fritters that are perfect for little hands to grip. Naturally sweet peas combined with refreshing mint and creamy feta cheese make these a nutrient-dense lunch or snack.

Ingredients

  • 1.5 cups Green Peas
  • 1 tablespoon Fresh Mint
  • 1 large Egg
  • 2 tablespoons Feta Cheese
  • 0.25 cup All-Purpose Flour
  • 2 tablespoons Whole Milk
  • 1 piece Spring Onion
  • 0.5 teaspoon Baking Powder
  • 1 tablespoon Olive Oil

Instructions

  1. Steam or boil the peas for 3-4 minutes until tender. Drain and rinse under cold water to keep them bright green.
  2. Place 3/4 of the peas in a bowl and mash them with a fork or pulse briefly in a blender. Leave the remaining 1/4 whole for texture.
  3. Finely chop the fresh mint and spring onion. Ensure the pieces are very small to prevent any choking risk.
  4. In a large bowl, whisk the egg and milk together.
  5. Add the mashed and whole peas, chopped mint, spring onion, and crumbled feta cheese to the egg mixture.
  6. Fold in the flour and baking powder. Stir until just combined into a thick batter.
  7. Heat olive oil in a non-stick skillet over medium-low heat.
  8. Drop 1 heaped tablespoon of batter per fritter into the pan. Use the back of the spoon to flatten them slightly into circles (about 5cm wide).
  9. Cook for 3 minutes on the first side until golden brown and the edges look set.
  10. Flip carefully and cook for another 2-3 minutes until cooked through.
  11. Allow to cool significantly before serving. These are great served at room temperature.
