These fun, star-shaped chicken patties are packed with hidden veggies like carrots and mushrooms. Soft, delicious, and perfectly sized for little hands, they make an ideal finger food for babies starting baby-led weaning or a fun lunch for toddlers. The whole family can enjoy these!
Ingredients
- 300 grams Ground Chicken
- 1 small Carrot
- 0.25 piece Onion
- 50 grams Button Mushrooms
- 1 teaspoon Fresh Thyme
- 50 grams Breadcrumbs
- 30 grams Grated Parmesan
- 1 tablespoon Olive Oil
Instructions
- Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper.
- Place the carrot, onion, and mushrooms in a food processor. Pulse until they are finely minced.
- Add the ground chicken, thyme, breadcrumbs, and grated cheese to the processor. Pulse a few more times until the mixture is well combined and slightly sticky.
- Transfer the mixture to a clean surface and flatten it to about 1.5 cm (half an inch) thick. Use a star-shaped cookie cutter to cut out stars. Re-flatten the leftover offcuts to make more stars.
- Arrange the stars on the baking sheet. You can lightly brush them with a bit of olive oil for a beautiful golden finish.
- Bake for 15 to 18 minutes, or until the chicken is thoroughly cooked (no pink inside) and golden brown. Let them cool slightly before serving to your little one.
