Spiced Gingerbread Snack Cake

A warmly spiced snack cake with ginger, cinnamon, and cloves, kept beautifully moist by applesauce. A cosy treat that fills the kitchen with the most wonderful aroma while baking.

Ingredients

  • 1.5 cups Whole-Wheat Flour
  • 0.5 cup Plain Greek Yogurt
  • 1 cup Unsweetened Applesauce
  • 2 large Eggs
  • 0.25 cup Molasses
  • 1.5 teaspoons Ground Cinnamon
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat the oven to 175 °C (350 °F). Grease and line a 20 cm (8-inch) square tin with baking paper.
  2. In a medium bowl, whisk together the yogurt, applesauce, eggs, molasses, maple syrup (3 tablespoons, optional), and vanilla until smooth.
  3. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, ginger, and cloves.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. Transfer the batter to the prepared tin and spread evenly.
  6. Bake for 30–33 minutes until a toothpick inserted in the centre comes out clean.
  7. Cool completely in the tin before slicing into small squares or fingers.
  8. Safety note: The spices are mild but still warming — start with a small piece to check your toddler's reaction to the flavour.
