Fluffy Spinach Blender Pancakes

These quick and easy green pancakes are a fantastic way to offer greens to your little ones. By blending fresh spinach with a ripe banana and simple pantry staples, you get perfectly soft, vibrant pancakes that toddlers and kids will devour. Great for baby-led weaning and perfectly family-friendly.

Ingredients

  • 1 cup All-purpose or whole wheat flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Cinnamon
  • 1 medium Ripe banana
  • 1 cup Fresh spinach
  • 0.5 cup Milk of choice
  • 2 tablespoons Coconut oil or melted butter
  • 1 large Egg
  • 1 teaspoon Vanilla extract

Instructions

  1. In a mixing bowl, combine the dry ingredients: flour, baking powder, cinnamon, and salt.
  2. Add the banana, fresh spinach, milk, egg, melted oil or butter, and vanilla extract into a blender. Blend on medium-high until the spinach is fully pureed and the liquid is smooth.
  3. Pour the bright green wet mixture into the dry ingredients. Stir gently with a spatula until just combined (be careful not to overmix to keep them fluffy).
  4. Warm a non-stick pan over medium-low heat. Spoon roughly 2 tablespoons of batter per pancake into the pan.
  5. Cook until small bubbles form on the surface and the edges look set (about 2-3 minutes). Flip carefully and cook the other side until golden.
  6. Serve warm. Cut into strips for younger babies or serve whole for older toddlers.
