Savory Baked Oatmeal Bars with Spinach & Broccoli

Soft, savory baked oatmeal bars loaded with finely chopped spinach, broccoli, and sweet potato. Cut into finger-sized strips, these are perfect for self-feeding and introduce baby to savory breakfast flavors beyond the usual sweet porridge.
Ingredients
- 1 cup Rolled Oats
- 1 small Sweet Potato
- 4 florets Broccoli
- 1 handful Fresh Spinach
- 1 large Egg
- 0.25 cup Whole Milk
- 1 teaspoon Tomato Paste
- 1 tablespoon Olive Oil
- 0.5 teaspoon Baking Powder
Instructions
- Preheat oven to 180°C (350°F). Line a small baking dish (about 20x15cm) with parchment paper.
- Steam the broccoli florets for 5-6 minutes until very soft. Finely chop them.
- Peel and cube the sweet potato. Microwave or steam for 8-10 minutes until soft. Mash with a fork.
- Wilt the spinach in a small pan for 1-2 minutes, then finely chop.
- In a bowl, combine the oats, mashed sweet potato, chopped broccoli, chopped spinach, egg, milk, tomato paste, olive oil, and Italian seasoning. Mix well.
- Spread the mixture evenly into the prepared baking dish. Press down gently with the back of a spoon.
- Bake for 30-35 minutes until firm and lightly golden on top.
- Cool completely in the dish before cutting into finger-sized bars (about 2cm wide, 6cm long).
- Serve at room temperature. Baby can hold the bars and self-feed.
