Baked Salmon with Sweet Potato Mash

A nutrient-dense meal featuring flakey, oven-baked salmon and creamy mashed sweet potato. High in Omega-3s and Vitamin A, this dish is gentle on the tummy and great for brain health.

Ingredients

  • 80 grams Salmon Fillet
  • 1 medium Sweet Potato
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Unsalted Butter
  • 1 tablespoon Whole Milk
  • 0.5 teaspoon Extra Virgin Olive Oil
  • 1 teaspoon Fresh Dill

Instructions

  1. Preheat your oven to 180°C (350°F). Line a small baking dish with parchment paper.
  2. Prepare the sweet potato: Peel the sweet potato and cut it into small cubes. Steam or boil the cubes for 12-15 minutes until very soft.
  3. Prepare the salmon: Place the salmon fillet on the baking dish. Rub it with a tiny drop of olive oil and a squeeze of fresh lemon juice.
  4. Bake the salmon for 10-12 minutes until it is cooked through and flakes easily with a fork.
  5. Safety Step: Remove the salmon from the oven. Using your fingers or a fork, flake the fish into very small pieces. Carefully feel through every piece to ensure there are absolutely no small bones.
  6. Make the mash: Drain the sweet potato and mash it thoroughly with a fork or potato masher. Stir in a teaspoon of unsalted butter and a splash of milk for extra creaminess.
  7. Stir the finely chopped dill into the mash or sprinkle it over the salmon flakes.
  8. Serve the salmon flakes alongside or mixed into the sweet potato mash.
  9. Safety Step: Ensure the meal has cooled to a safe temperature and that the texture is soft and moist before serving.
