Soft Hummus & Roasted Veggie Pinwheels

A colorful and soft wrap filled with creamy hummus and tender roasted vegetables. These 'pinwheels' are perfectly sized for toddler hands and packed with plant-based protein and fiber.
Ingredients
- 1 large Whole Wheat Tortilla
- 3 tablespoons Hummus
- 0.5 piece Red Bell Pepper
- 0.5 piece Zucchini
- 1 teaspoon Extra Virgin Olive Oil
- 1 pinch Dried Oregano
Instructions
- Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Cut the bell pepper and zucchini into thin strips (about the size of a finger).
- Toss the vegetables with 1 teaspoon of olive oil and the dried oregano on the baking sheet.
- Roast for 15-18 minutes until the vegetables are very soft and tender. Allow them to cool slightly.
- Warm the tortilla in a dry pan for 10 seconds per side just until soft and pliable (do not let it get crispy).
- Spread a generous layer of hummus across the entire surface of the tortilla.
- Place the roasted veggie strips in a single layer on top of the hummus.
- Roll the tortilla up very tightly to form a long log.
- Safety Step: Use a sharp knife to cut the log into 1.5cm thick 'pinwheels' or rounds. This makes them easier to chew and reduces the risk of the toddler taking too large a bite.
- Serve at room temperature.
