Soft Hummus & Roasted Veggie Pinwheels

A colorful and soft wrap filled with creamy hummus and tender roasted vegetables. These 'pinwheels' are perfectly sized for toddler hands and packed with plant-based protein and fiber.

Ingredients

  • 1 large Whole Wheat Tortilla
  • 3 tablespoons Hummus
  • 0.5 piece Red Bell Pepper
  • 0.5 piece Zucchini
  • 1 teaspoon Extra Virgin Olive Oil
  • 1 pinch Dried Oregano

Instructions

  1. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. Cut the bell pepper and zucchini into thin strips (about the size of a finger).
  3. Toss the vegetables with 1 teaspoon of olive oil and the dried oregano on the baking sheet.
  4. Roast for 15-18 minutes until the vegetables are very soft and tender. Allow them to cool slightly.
  5. Warm the tortilla in a dry pan for 10 seconds per side just until soft and pliable (do not let it get crispy).
  6. Spread a generous layer of hummus across the entire surface of the tortilla.
  7. Place the roasted veggie strips in a single layer on top of the hummus.
  8. Roll the tortilla up very tightly to form a long log.
  9. Safety Step: Use a sharp knife to cut the log into 1.5cm thick 'pinwheels' or rounds. This makes them easier to chew and reduces the risk of the toddler taking too large a bite.
  10. Serve at room temperature.
