Golden Spinach & Cheese Hearts

These adorable heart-shaped bites are a fantastic way to get your toddler to love spinach. Soft on the inside with a boost of iron and calcium, they work perfectly as a finger food or a side dish for the whole family.
Ingredients
- 250 grams Potato
- 100 grams Fresh Spinach
- 50 grams Cheddar Cheese
- 40 grams Breadcrumbs
- 1 piece Egg
Instructions
- Peel and cube the potatoes, then boil them in water for about 12–15 minutes until tender. Drain and mash them until smooth.
- While potatoes are cooking, steam the fresh spinach for 2 minutes until wilted. Very importantly: squeeze out as much water as possible from the spinach and chop it very finely.
- In a large mixing bowl, combine the mashed potatoes, chopped spinach, grated cheddar cheese, and half of the breadcrumbs.
- Add the lightly beaten egg to the mixture and stir well until everything holds together. If it feels too wet, add a little more breadcrumbs.
- Take a small amount of the mixture and shape it into a heart using a cookie cutter or your hands (about 1 cm thick).
- Coat each heart lightly with the remaining breadcrumbs for a bit of crunch.
- Heat a little olive oil in a non-stick pan and fry for 2–3 minutes on each side until golden brown. Alternatively, bake at 200°C (400°F) for 15 minutes.
- Let them cool down slightly before serving so they firm up and are safe for your baby to handle.
