Golden Spinach & Cheese Hearts

These adorable heart-shaped bites are a fantastic way to get your toddler to love spinach. Soft on the inside with a boost of iron and calcium, they work perfectly as a finger food or a side dish for the whole family.

Ingredients

  • 250 grams Potato
  • 100 grams Fresh Spinach
  • 50 grams Cheddar Cheese
  • 40 grams Breadcrumbs
  • 1 piece Egg

Instructions

  1. Peel and cube the potatoes, then boil them in water for about 12–15 minutes until tender. Drain and mash them until smooth.
  2. While potatoes are cooking, steam the fresh spinach for 2 minutes until wilted. Very importantly: squeeze out as much water as possible from the spinach and chop it very finely.
  3. In a large mixing bowl, combine the mashed potatoes, chopped spinach, grated cheddar cheese, and half of the breadcrumbs.
  4. Add the lightly beaten egg to the mixture and stir well until everything holds together. If it feels too wet, add a little more breadcrumbs.
  5. Take a small amount of the mixture and shape it into a heart using a cookie cutter or your hands (about 1 cm thick).
  6. Coat each heart lightly with the remaining breadcrumbs for a bit of crunch.
  7. Heat a little olive oil in a non-stick pan and fry for 2–3 minutes on each side until golden brown. Alternatively, bake at 200°C (400°F) for 15 minutes.
  8. Let them cool down slightly before serving so they firm up and are safe for your baby to handle.
