Brain-Boost Sardine & Tomato Toast

Ingredients
- 50 grams Canned Sardines
- 0.5 piece Tomato
- 1 slice Whole Grain Bread
- 0.5 teaspoon Extra Virgin Olive Oil
- 0.25 teaspoon Lemon Juice
- 1 pinch Dried Oregano
Instructions
- Prepare the sardines: Drain the canned sardines thoroughly. Place them on a plate and use a fork to mash them into a fine paste. Safety Step: Check for and remove any larger backbones, though the tiny pin-bones are soft and safe to eat.
- Prepare the tomato: Remove the seeds and watery core of the tomato to prevent the toast from getting soggy. Finely dice the remaining tomato flesh.
- In a small bowl, mix the mashed sardines with the extra virgin olive oil and a squeeze of fresh lemon juice. The lemon helps cut the 'fishy' taste and boosts iron absorption.
- Lightly toast the bread. It should be firm enough to hold the toppings but still soft enough for a toddler to chew easily.
