Brain-Boost Sardine & Tomato Toast

A nutritional powerhouse rich in Omega-3, Calcium, and Vitamin D. Creamy mashed sardines and fresh tomatoes on soft whole-grain toast make for a quick, brain-boosting lunch.

Ingredients

  • 50 grams Canned Sardines
  • 0.5 piece Tomato
  • 1 slice Whole Grain Bread
  • 0.5 teaspoon Extra Virgin Olive Oil
  • 0.25 teaspoon Lemon Juice
  • 1 pinch Dried Oregano

Instructions

  1. Prepare the sardines: Drain the canned sardines thoroughly. Place them on a plate and use a fork to mash them into a fine paste. Safety Step: Check for and remove any larger backbones, though the tiny pin-bones are soft and safe to eat.
  2. Prepare the tomato: Remove the seeds and watery core of the tomato to prevent the toast from getting soggy. Finely dice the remaining tomato flesh.
  3. In a small bowl, mix the mashed sardines with the extra virgin olive oil and a squeeze of fresh lemon juice. The lemon helps cut the 'fishy' taste and boosts iron absorption.
  4. Lightly toast the bread. It should be firm enough to hold the toppings but still soft enough for a toddler to chew easily.
  5. Safety Step: Cut off the hard crusts from the toast to prevent any scraping of the toddler's throat or gums.
  6. Spread the sardine mixture evenly over the toast.
  7. Top with the finely diced tomatoes. Use the back of a fork to gently press the tomatoes into the sardine paste so they don't fall off.
  8. Add a tiny pinch of dried oregano or fresh parsley for extra flavor.
  9. Cut the toast into small squares or 'fingers' (soldiers) before serving.
