Soft Chicken & Avocado Quesadilla

A delicious and nutrient-packed meal featuring tender shredded chicken, creamy mashed avocado, and melted cheese inside a whole-wheat tortilla. Easy to hold and fun to eat.

Ingredients

  • 0.25 cup Cooked Chicken Breast
  • 0.5 piece Ripe Avocado
  • 1 piece Whole-Wheat Tortilla
  • 2 tablespoons Shredded Cheese
  • 0.5 teaspoon Lime Juice

Instructions

  1. Prepare the chicken: Ensure the chicken breast is fully cooked and tender. Shred it finely or dice into very small pieces (approx. 0.5cm). Safety Step: Large chunks of meat can be a choking hazard; keeping them small and moist is key.
  2. Prepare the avocado: In a small bowl, mash the ripe avocado with a tiny squeeze of lime juice to prevent browning and add a hint of flavor.
  3. Place a whole-wheat tortilla on a clean surface. Spread the mashed avocado evenly over one half of the tortilla.
  4. Distribute the shredded chicken over the avocado layer, then sprinkle with the shredded cheddar or mozzarella cheese.
  5. Fold the tortilla in half to cover the filling.
  6. Heat a non-stick skillet over medium-low heat. Add a tiny drop of olive oil if desired.
  7. Place the quesadilla in the pan and cook for 2-3 minutes on each side until the cheese is melted and the tortilla is lightly golden but still soft enough to chew easily.
  8. Safety Step: Remove from heat and let it cool for at least 3-4 minutes. Melted cheese can be very hot and cause burns.
  9. Cut the quesadilla into small triangles or 'strips' (about 2-3cm wide) that are manageable for your toddler's grasp.
  10. Serve with a side of plain Greek yogurt for dipping if your toddler enjoys it.
