Soft-Bake Banana & Oat Granola Bars

Soft, chewy, and naturally sweet granola bars made with oats, mashed banana, and almond butter. A perfect on-the-go snack that is safe and nutritious for toddlers.

Ingredients

  • 2 medium Ripe Bananas
  • 1.5 cups Rolled Oats
  • 0.25 cup Almond Butter
  • 2 tablespoons Coconut Oil
  • 3 pieces Dried Apricots
  • 0.5 teaspoon Ground Cinnamon
  • 0.5 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 180°C (350°F). Line a small square baking dish (about 20x20cm) with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork until they are a smooth liquid consistency.
  3. Stir in the almond butter (or peanut butter), melted coconut oil, and vanilla extract. Mix until well combined.
  4. Add the rolled oats, ground cinnamon, and the finely diced dried apricots (or raisins).
  5. Safety Step: If using raisins or dried fruit, ensure they are chopped very small (half the size of a pea) to prevent choking.
  6. Stir the mixture thoroughly. The oats should be completely coated and the mixture should be thick and sticky.
  7. Press the mixture firmly into the prepared baking dish. Use the back of a spoon to flatten it into an even layer (about 1.5cm thick).
  8. Bake for 15-20 minutes until the edges are just starting to turn golden brown. Do not overbake, or they will become too hard.
  9. Safety Step: Let the bars cool completely in the pan before cutting. This helps them set so they don't crumble in your toddler's hands.
  10. Cut into small rectangular 'fingers' (about 2cm wide and 5cm long). Store in an airtight container.
