Rainbow Veggie Pesto Pizzas

Ingredients
- 2 pieces Whole-wheat English muffins
- 0.33 cup Basil pesto
- 0.75 cup Mixed bell peppers
- 0.5 cup Shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Place the whole-wheat English muffin halves on a baking sheet, cut-side up.
- Spread a thin, even layer of pesto over each muffin half.
- Sprinkle the shredded mozzarella cheese over the pesto.
- Top with the finely chopped red, orange, and yellow bell peppers to create a rainbow pattern.
- Bake for 8 to 10 minutes until the cheese is melted and the muffins are slightly toasted.
- Allow to cool slightly and cut into bite-sized quarters or strips before serving to your toddler.
