Golden Sweet Potato & Chicken Croquettes

Soft, nutrient-dense bites made with creamy sweet potato and tender chicken. These croquettes are perfect for tiny hands to hold and provide a great source of protein and Vitamin A for growing toddlers.

Ingredients

  • 300 grams Sweet Potato
  • 150 grams Chicken Breast
  • 40 grams Cheddar Cheese
  • 50 grams Breadcrumbs
  • 1 tablespoon Olive Oil

Instructions

  1. Peel the sweet potato and cut into cubes. Steam or boil for about 12–15 minutes until very tender. Drain well and mash until smooth.
  2. While the potato is cooking, finely dice the chicken breast. Heat a tiny bit of oil in a pan and sauté the chicken until fully cooked through and golden. Alternatively, you can use finely shredded leftover roast chicken.
  3. In a large mixing bowl, combine the mashed sweet potato, cooked chicken, and grated cheese. Mix until well combined and the cheese starts to melt slightly from the heat of the potato.
  4. Take a tablespoon of the mixture and roll it into a small cylinder or ball shape between your palms.
  5. Place the breadcrumbs on a shallow plate. Roll each croquette in the breadcrumbs until evenly coated.
  6. Heat a little olive oil in a non-stick frying pan over medium heat. Fry the croquettes for 2–3 minutes on each side until they are crispy and golden brown. You can also bake them at 200°C (400°F) for 15 minutes.
  7. Allow them to cool slightly before serving to ensure the center isn't too hot for your little one.
