Golden Sweet Potato & Chicken Croquettes

Soft, nutrient-dense bites made with creamy sweet potato and tender chicken. These croquettes are perfect for tiny hands to hold and provide a great source of protein and Vitamin A for growing toddlers.
Ingredients
- 300 grams Sweet Potato
- 150 grams Chicken Breast
- 40 grams Cheddar Cheese
- 50 grams Breadcrumbs
- 1 tablespoon Olive Oil
Instructions
- Peel the sweet potato and cut into cubes. Steam or boil for about 12–15 minutes until very tender. Drain well and mash until smooth.
- While the potato is cooking, finely dice the chicken breast. Heat a tiny bit of oil in a pan and sauté the chicken until fully cooked through and golden. Alternatively, you can use finely shredded leftover roast chicken.
- In a large mixing bowl, combine the mashed sweet potato, cooked chicken, and grated cheese. Mix until well combined and the cheese starts to melt slightly from the heat of the potato.
- Take a tablespoon of the mixture and roll it into a small cylinder or ball shape between your palms.
- Place the breadcrumbs on a shallow plate. Roll each croquette in the breadcrumbs until evenly coated.
- Heat a little olive oil in a non-stick frying pan over medium heat. Fry the croquettes for 2–3 minutes on each side until they are crispy and golden brown. You can also bake them at 200°C (400°F) for 15 minutes.
- Allow them to cool slightly before serving to ensure the center isn't too hot for your little one.
