Pumpkin & Peanut Butter Energy Balls

Soft, no-bake bites made with pumpkin purée, peanut butter, oats, and warming spices. A perfectly seasonal snack that is rich in beta-carotene and makes a great on-the-go energy booster.
Ingredients
- 0.5 cup Smooth Peanut Butter
- 1 cup Rolled Oats
- 2 tablespoons Chia Seeds
- 2 tablespoons Ground Flaxseed
- 2 tablespoons Honey
- 1.5 teaspoons Pumpkin Pie Spice
Instructions
- In a food processor, pulse the oats until they form a coarse flour.
- In a large mixing bowl, combine all ingredients: oat flour, pumpkin purée (1/2 cup / 120g), peanut butter, honey, chia seeds, ground flaxseed, and pumpkin pie spice.
- Mix thoroughly until a sticky, uniform dough forms.
- Using a small scoop or tablespoon, portion the mixture and roll into bite-sized balls.
- Place on a lined tray and refrigerate for at least 20 minutes to set.
- Safety note: Cut each ball in half for toddlers. Ensure peanuts have been safely introduced.
