Peanut Butter & White Bean Bliss Balls

Protein-packed no-bake balls combining creamy peanut butter with white beans, oats, and dates. The beans are completely hidden, adding plant protein and keeping every ball soft and satisfying.
Ingredients
- 0.5 cup Smooth Peanut Butter
- 1 cup Rolled Oats
- 7 pieces Medjool Dates
- 1 teaspoon Vanilla Extract
Instructions
- Pulse the oats in a food processor or blender until they form a coarse flour.
- Add the white beans (1 cup / 180g, rinsed and drained), peanut butter, pitted dates, and vanilla to the food processor.
- Blend until the mixture is smooth and holds together when pressed. Add water one teaspoon at a time if it feels too dry.
- Using a small scoop or tablespoon, portion the mixture and roll into balls between your palms.
- Place on a tray and refrigerate for at least 20 minutes to firm up.
- Safety note: Cut each ball in half for toddlers. Ensure peanuts have been safely introduced before serving.
