Lemon & Coconut Bliss Balls

Zesty, no-bake bliss balls with walnuts, dates, coconut, and a bright hit of lemon. Light, fresh, and naturally sweet — a refreshing alternative to the usual chocolate-based energy bites.

Ingredients

  • 7 pieces Medjool Dates
  • 1 tablespoon Chia Seeds
  • 1 piece Lemon
  • 1 teaspoon Vanilla Extract

Instructions

  1. Add the walnuts (1 cup / 105g) to a food processor and pulse until finely chopped.
  2. Add the pitted dates, shredded coconut (1/2 cup, or 1/4 cup rolled oats for nut-free variation), chia seeds, lemon zest, lemon juice, and vanilla extract.
  3. Blend on high for 1–2 minutes until a sticky dough forms that holds together when pressed.
  4. Using a small scoop or tablespoon, portion the mixture and roll into bite-sized balls between your palms.
  5. Optionally roll in extra shredded coconut for coating.
  6. Refrigerate for at least 20 minutes to firm up before serving.
  7. Safety note: Cut each ball in half for toddlers. For a nut-free version, replace walnuts with sunflower seeds or pumpkin seeds.
