Chia, Banana & Coconut Pudding

A no-cook overnight pudding made by soaking chia seeds in coconut milk with mashed banana and a hint of vanilla. Chia seeds are loaded with omega-3 fatty acids for brain development, plus fiber and protein. The gel-like texture is naturally baby-friendly and perfect for self-feeding.
Ingredients
- 3 tablespoons Chia Seeds
- 200 ml Coconut Milk
- 1 medium Ripe Banana
- 0.5 teaspoon Vanilla Extract
Instructions
- In a bowl or jar, combine the coconut milk, chia seeds, and vanilla extract. Stir well.
- Mash the banana until smooth and stir into the chia mixture.
- Cover and refrigerate for at least 4 hours or overnight, until the chia seeds have absorbed the liquid and formed a thick, pudding-like gel.
- Before serving, stir well and check the consistency. The pudding should be thick and gel-like with no runny liquid.
- If too thick, add a small splash of coconut milk. If too thin, let it sit longer.
- Serve cold or at room temperature. Baby can scoop with hands or a pre-loaded spoon.
