No-Bake Carrot & Walnut Energy Balls

Soft, no-bake bites made with grated carrots, walnuts, dates, and oats, spiced with a hint of cinnamon. A naturally sweet energy snack that sneaks in a full serving of vegetables.
Ingredients
- 1 medium Carrot
- 0.5 cup Rolled Oats
- 8 pieces Medjool Dates
- 0.5 teaspoon Ground Cinnamon
Instructions
- Add the chopped carrot to a food processor and pulse until finely minced.
- Add the walnuts (1 cup / 105g), pitted dates, oats, and cinnamon. Blend until the mixture clumps together and feels sticky when pressed between your fingers.
- If desired, add 1 tablespoon of chia or hemp seeds and pulse briefly.
- Using a small scoop or tablespoon, portion the mixture and roll into bite-sized balls between your palms.
- Optionally roll in shredded unsweetened coconut for a coating.
- Serve immediately or refrigerate for 20 minutes for a firmer texture.
- Safety note: Cut each ball in half or quarters for toddlers to reduce choking risk. Ensure tree nuts have been safely introduced.
