Fluffy Banana Oat Pancakes

Ingredients
- 1 medium Ripe Banana
- 0.5 cup Rolled Oats
- 1 large Egg
Instructions
- In a blender, combine the rolled oats and pulse until they reach a fine, flour-like consistency.
- Add the ripe banana and the egg to the blender. Blend until a smooth batter forms.
- Optional: Stir in a tiny pinch of cinnamon for extra flavor and palate expansion.
- Heat a non-stick skillet over medium-low heat and lightly grease with a tiny amount of coconut oil or unsalted butter.
- Pour small tablespoons of batter onto the skillet to make 'silver dollar' sized pancakes (about 2-3 inches wide). Smaller pancakes are easier for babies to handle.
- Cook for 2-3 minutes until small bubbles form on the surface and the edges look set.
- Flip carefully and cook for another 1-2 minutes until golden brown and cooked through.
- Allow to cool, then cut into bite-sized pieces (about 1cm squares) to encourage the pincer grasp.
