Soft Scrambled Eggs with Spinach

A fluffy, iron-boosted breakfast. Finely chopped spinach is sautéed into creamy scrambled eggs to provide a nutrient-dense meal that supports brain development and healthy growth.
Ingredients
- 1 large Egg
- 1 handful Fresh Spinach
- 1 tablespoon Breast milk or Formula
Instructions
- Wash the spinach thoroughly and chop it into very fine, confetti-sized pieces. This ensures the leaves don't stick to the baby's throat.
- In a small bowl, whisk the egg with 1 tablespoon of breast milk, formula, or water until well combined.
- Heat a non-stick pan over medium-low heat and add a tiny bit of unsalted butter or olive oil.
- Add the chopped spinach to the pan and sauté for 1-2 minutes until completely wilted and soft.
- Pour the egg mixture over the spinach. Using a spatula, gently stir the eggs constantly.
- Cook until the eggs are fully set (not runny) to ensure safety, but remove from heat while they still look moist.
- Cut or break the scrambled eggs into small, bite-sized pieces (about 1cm) for your baby to practice their pincer grasp.
- Allow to cool and serve.
