Soft Puffed Quinoa & Banana Toddler Cookies

Ingredients
30 g puffed quinoa
unsweetened
1 medium ripe banana
ripe or spotted for natural sweetness
1 tablespoon smooth peanut butter
100% peanuts with no added salt or sugar
Instructions
Preheat the oven to 180°C (350°F) and line a flat baking tray with parchment paper (5 minutes).
Peel 1 medium ripe banana and place it in a medium mixing bowl. Mash thoroughly with a fork for 2 minutes until smooth and creamy.
Add 1 tablespoon smooth peanut butter and 30 g puffed quinoa to the mashed banana. Stir with a spoon for 1 minute until evenly combined into a sticky, pliable dough.
Divide the dough into 6 equal portions, roll into small balls, place onto the prepared baking tray, and gently press flat into round discs about 4 cm wide and 1 cm thick (2 minutes).
Bake in the preheated oven at 180°C for 12 minutes, until lightly golden on the bottoms and set to the touch.
Remove from the oven and allow the cookies to cool on the baking tray for 10 minutes until lukewarm and firm to handle before serving to your toddler.
Storage
Store cooled cookies in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days. Freeze in a single layer before transferring to a freezer bag for up to 2 months; thaw at room temperature before serving.
