Iron-Rich Beef Bolognese (Baby Version)

A nutrient-dense, slow-cooked sauce packed with iron and vitamins. This version uses finely minced beef and soft-cooked vegetables in a natural tomato base, perfect for serving over tiny pasta or mashed potatoes.
Ingredients
- 100 grams Lean Ground Beef
- 2 medium Ripe Tomatoes
- 1 tablespoon Onion
- 1 tablespoon Carrot
- 1 teaspoon Celery
- 0.5 clove Garlic
- 1 teaspoon Olive Oil
- 1 pinch Dried Oregano or Basil
- 100 ml Water
Instructions
- Finely dice the onion, carrot, and celery. The pieces should be no larger than 0.5cm to ensure they soften completely.
- Heat the olive oil in a small saucepan over medium-low heat.
- Add the diced vegetables and sauté for 5-8 minutes until they are very soft and translucent.
- Add the ground beef to the pan. Use a wooden spoon or spatula to break the meat apart into the smallest possible crumbles as it browns.
- Add the minced garlic and dried oregano/basil. Stir for 1 minute.
- Add the finely diced tomatoes and water (or low-sodium homemade stock).
- Bring to a gentle boil, then reduce heat to the lowest setting. Cover and simmer for 25-30 minutes. This slow cooking ensures the beef becomes incredibly tender.
- Check the consistency: the sauce should be thick and the vegetables 'melt-in-the-mouth' soft. If it's too dry, add a splash of water.
- Serve over small pasta shapes (like Stelline or Ditalini) or mix into a vegetable mash.
