Baked Cod with Lemon & Olive Oil

A simple, clean, and nutritious white fish dish. The cod is baked until it flakes easily, then drizzled with lemon and olive oil to create a soft texture that is safe and delicious for older infants.
Ingredients
- 100 grams Cod Fillet
- 2 teaspoons Extra Virgin Olive Oil
- 1 wedge Lemon
- 1 pinch Dried Oregano
Instructions
- Preheat your oven to 180°C (350°F).
- Pat the cod fillet dry with a paper towel. Carefully run your fingers across the flesh to check for any hidden bones.
- Place the cod on a piece of parchment paper or in a small baking dish.
- Drizzle the extra virgin olive oil over the fish.
- Squeeze the fresh lemon juice over the fillet and sprinkle with the dried oregano.
- Fold the parchment paper over the fish to create a pouch (en papillote), or cover the dish with foil. This steams the fish in its own juices, keeping it moist.
- Bake for 12-15 minutes depending on the thickness, until the fish is opaque and flakes easily with a fork.
- Safety Check: Use a fork to flake the fish into small, bite-sized pieces. Check once more for any tiny bones during this process.
- Allow to cool to a safe temperature. Serve the soft flakes as finger food or mixed with a vegetable mash.
