Baked Cod with Lemon & Olive Oil

A simple, clean, and nutritious white fish dish. The cod is baked until it flakes easily, then drizzled with lemon and olive oil to create a soft texture that is safe and delicious for older infants.

Ingredients

  • 100 grams Cod Fillet
  • 2 teaspoons Extra Virgin Olive Oil
  • 1 wedge Lemon
  • 1 pinch Dried Oregano

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Pat the cod fillet dry with a paper towel. Carefully run your fingers across the flesh to check for any hidden bones.
  3. Place the cod on a piece of parchment paper or in a small baking dish.
  4. Drizzle the extra virgin olive oil over the fish.
  5. Squeeze the fresh lemon juice over the fillet and sprinkle with the dried oregano.
  6. Fold the parchment paper over the fish to create a pouch (en papillote), or cover the dish with foil. This steams the fish in its own juices, keeping it moist.
  7. Bake for 12-15 minutes depending on the thickness, until the fish is opaque and flakes easily with a fork.
  8. Safety Check: Use a fork to flake the fish into small, bite-sized pieces. Check once more for any tiny bones during this process.
  9. Allow to cool to a safe temperature. Serve the soft flakes as finger food or mixed with a vegetable mash.
